This is the third or fourth ordering of your ribbies. On more than one occasion, we were blessed with obvious (4) adjacent cuts.
This last prep was Roman style (per the recipe). A couple hours of marinade in red wine, olio, smashed garlic clove and a shitload of fresh Rosemary.
Seared on high charcoal heat.
Outstanding tenderness.
We also do a Saltimbuca, but not this time.
