Great eggplant snacks without the hard work and preparatiom.

I ordered from this company for the first time. The eggplant rollatini was so delicious. My husband and I had it for dinner and we woke up in the middle of the night and had leftovers because we both dreamt about how good it is!

I baked with a covering of Hunts, tomato, fired product, and a slice of Provolone cheese. Had my neighbor over for dinner. We both thought it was very good, served with sauteed mushrooms. Nice change from the everyday. Looked like I fussed more than I had.

After a series of hot steamy days and nights cooking anything for a light supper is a challenge. but wait: there are those wonderful eggplant rollitini rolls filled with a spear of ricotta cheese. Pop 3 or 4 per person in the oven for a few minutes and you have a filling, flavorful, healthy vegetable meal. Perfect! Sure works for me.
