The first pair of fillets were cooked according to the supplier instructions: frozen in the oven. The second pair were thawed in a refrigerator for 24 hours, then cooked on a gas grill in a Weber 6470 fish basket on medium heat for six minutes per side. The potato crust was crispy with this latter method of preparation.
