We just love Grouper, and what is offered by New York and Seafood Company is wonderful. We thaw overnight the fish fillets. For fish, I prefer to sauté in the pan. Pure Olive Oil & butter on the pan’s bottom and away we go. Typically, we do four minutes on one side, flip it over and three minutes on the remaining side. We use a mild seasoning and keep the dinner simple with only some steamed vegetables and/or rice or potatoes.
