I live in Maryland and have looked many places for frozen breaded eggplant. I ordered from The New York Company and made eggplant parmigiana for our annual family Christmas party last night. We had 35 guests. So many raved about the eggplant parmigiana and many wanted the recipe. I clearly recommend the breaded eggplant from The New York Company….delicious and easy to make. It arrived on time and was still frozen as guaranteed.

I have ordered these twice because it makes eggplant Parmesan so much easier! One tip is to make them crispy, bake them as directed at 375 for 15 minutes -but then I broil them for another 15 or 20 minutes flipping in between. So much better if you take the time to broil after you bake as it makes them crispy, otherwise the taste is OK but soggy.
